veggie overload

My latest thing is to eat veggies at all three meals. Today was day 1 of what I would like to have be a streak.


emoticon I had 2 carrots with a small healthy breakfast

emoticon 2 cups of broccoli with a small healthy lunch

emoticon 1 cup of cauliflower with a small healthy dinner..

I hope lots of healthy things are happening in my body because I'd really love to have pizza just about now.. emoticon emoticon

Does anyone have any successful vegetable eating strategies?

    I have always been a veggie lover, meals are not complete without a couple of veggies sometimes 3, tonight I am having an ear of corn, some fresh picked fiddleheads and dandelion greens, yum yum

    I have a thing about steaming them in the micro. I used to use a small bowl with a cover, but now have 2 little microwave steamer things that kick butt. I like fresh best but also use frozen. My favorite: steamed fresh green beans with a teeny drizzle of sesame oil and soy sauce. Not enough to throw anything out of whack, but a smidgen goes a long way on the hot stuff. Same combo with steamed broccoli but sometimes I add some red pepper flakes there. Most of the time I'm pretty lazy and just eat steamed vegs unadorned. Oh, and just fruit at bfast unless I'm doing a whole egg thing with peppers, onions, mushrooms (but that's ultra rare - usually that's dinner).

    I just like a lot of salad. I try to get in my veggies.
    I've been doing Bountiful Baskets and it is forcing me to cook some I've never had before. Last night we had Kale. I sautéed it with a little olive oil and garlic. Not my favorite but I ate it real fast! LOL

    Umm, well, I must admit that I seem to have always be passionate for veggies, and weird ones that most don't adore either. Like right now I'm practically making out with brussel sprouts since I love them so flipping much, ha!
    And eggplant, and funky mushrooms, and kale. I KNOW, most people say eeeeeeew!!!
    I must have an alien belly...ha!!!

    I guess if you can roast any veggie and pour balsamic on it, I'll eat it.
    Wait, where's the cat?!? KIDDING!

    I made up a HUGE salad in the biggest lidded bowl that I have because that way...
    1. It's already done so all I have to do is portion it out, throw my protein on and I'm good to go
    2. Since it's open, I eat it so it doesn't go bad lol

    I suggest having one or two cookbooks dedicated to veggies. My favourite is River Cottage Veg Every Day; it gives you lots of ideas for lovely recipes that'll bring variety to eating veggies :-) xx

    I love raw veggies - of all types. Hummus is great too!
