I watched the Nascar race...Dale Jr was in the lead and ran out of gas right at the end...that's how we are if we do not get the right blend of food and enough carbs. If we go over on carbs then we just waste the fuel so to speak. I need to watch...today seemed ok...but in reality I was way off with what I ate. I did some bacon at breakfast. It was precooked then froze so all I did was reheat it; no grease. I did my scrambled eggs in the microwave too. Breakfast 3 large eggs whisked, add crumbled bacon, and chives (and anything else you like) basic rule is 1 minute take out mix up again so the center gets cooked and put back in for 1 - 2 minutes depending on the power of the microwave. Ok basic is 1 minute per egg is basic rule of thumb...but if it is a higher power microwave cut time in half and watch it close, restart as needed. It tasted great. I really enjoyed it.

    I've always used a pan for eggs - I'll have to try the microwave!! My problem is going over on my fat allowance - seems as though everything has fat in it, including oranges. Guess I'm stuck with dressing free salad!!
