Bean And Ham Soup

Wednesday, March 05, 2014

Hello Sparkfamily! I am making good ole' yummy soup! Do you smell it? Take a look!

Ingredients~

48 oz great northern beans
64 oz chicken broth
1 Tbsp rosemary
1 Tbsp olive oil
2 lbs ham
2 lbs carrot, sliced
1 lb celery, chopped
4 cloves garlic, minced
1 large onion, chopped
2 lbs potatoes, chopped

Directions~

Peel and chop carrots and potatoes. Chop celery, onions and mince garlic. Cut ham into bit sized pieces.
Saute onions, garlic and ham in olive oil in large soup/stock pot until onions are translucent.
Add carrots, celery, potatoes, rosemary and chicken stock to just cover. Salt and pepper to taste.
Cover and bring to a boil.
Stir and reduce heat and simmer, stirring occasionally, until vegetables are cooked but still a little bit firm.
Add beans and return to boil.
Reduce heat and simmer uncovered for another 10-20 minutes.
Note: recipe calls for cooked ham (off the bone) but if you have leftover bone-in ham cook on the bone with the vegetables until they are cooked, then remove ham and bone, cut remaining ham from the bone and add back into soup before adding beans. Enjoy!

Do you have a "green" thumb? Have a healthy day! Hugs, Rose:) emoticon

Looks good! I do not tolerate pork, and always try and find a substitute. I have tried several things, but would be interested in your input for something to try. emoticon

Wonderful! I have a big bag of northern beans and no idea what to do with them. I have never cooked white beans before, except in a mix. I'm excited.

Oh I always purposely buy my ham with the bone in (think it's ham shank?) I bake the ham for a ham dinner then carve any leftovers for soup.

I will take the bone and boil it for HOURS to get all that good ham goodness from the bone. Makes a wonderful stock.

Otherwise, I add any veggies I have hanging around too. Delicious!

This recipe absolutely brings me back to my childhood! Daddy makes wonderful soup that he learned how to make from his Mom!
