Hello Sparkfamily! Do you like turkey, veggies and brown rice? Well then, take a look here!
1 tsp ground basil
1 tsp ground oregano
1 tsp rosemary
12 oz turkey sausage
4 cloves garlic
1 cup pieces or slices fresh mushrooms
1 cup chopped onion
1 can tomatoes, diced
2 Tbsps tomato paste
1 cup chopped red pepper
3 cups brown rice
Brown sausage in fry pan. No need for added fat.
Remove sausage links and slice.
Add diced onion to fry pan. Sauté till transparent. Add garlic and sauté for an additional minute or two. Return sliced turkey sausage to fry pan.
Add diced red pepper and sliced fresh mushrooms. Sauté till vegetables soften.
Add canned diced tomatoes. Cook till mixture comes to a boil.
Add tomato paste to thicken. Add dried herbs.
Reduce heat. Simmer for about an hour.
Cook the brown rice. Serve turkey and tomatoes over rice. Enjoy!
