Today will be day 64 of my current 10 min of exercise/day streak. Not sure if I'll elliptical, Zumba, or do weights, just know I'll probably keep it short.
Today will be busy for me. Last week we ended up with lots of leftovers and I've got to take care of them. I made a ton of Irish stew for a prom fundraiser, not expecting it to come home. Lots came home and I need to freeze a bunch of it. Hubby grilled a bunch of steaks and pork chops. Last night I made three enchilada casseroles with all the leftover pork and put two in the freezer. I also made a breakfast casserole for the kids with leftover shredded pork. I made the dough for cookies yesterday. I was trying to make chocolate chip, but after I started I realized that someone ate some of my chips! I had to adjust mid recipe and added in white chips and caramel bits. The kids reaction, "These are your best cookies ever!" I served them warm for dessert with vanilla ice cream. I only baked up two dozen yesterday, so I have the rest of the double batch to bake today. I may try to get another type of cookie made. I have two recipes I'm ready for that are new to me: Maple-pecan, and root-beer. We'll see which mood hits me. I also have to make my lobster soup for Ash Wednesday and Friday. It's better if it sits overnight and is warmed up as leftovers. It's kind of a cross between a bisque and chowder since I leave it chunky. All this cooking is easy since mine and hubby's meals are just warmed up steak and veggie. I don't have to worry about preparing a healthy meal too, just the fun stuff I love to cook for the kids.
Well, I'd better get cooking!!
