Manicotti, It's What's For Dinner!

Feeling rather lazy today but trying my best to get stuff done. I got dishes washed and put away and had my breakfast of organic hot green tea and 200 grams of fresh pineapple. For lunch I'm having a red delicious apple and an orange. Tonight's dinner should be pretty yummy! I'm making manicotti stuffed with Galbani Ricotta Cheese that I'm going to add some parsley to it and then going to make a sauce with diced yellow onion, green bell peppers, roma tomatoes, italian sausage, and half a jar of pasta sauce. Once I assemble everything I'm going to top it with part-skim mozzarella cheese and serve it up with a side of sautéed asparagus. The Italian in me craves Italian food often so I try to limit the heavy pasta dishes to only 2-3 times per month. I absolutely love my pasta but my hips sure don't but that's okay ;)

The rain has finally let up and it's nice and sunny out for the rest of the day until tonight when another rain storm moves in. I'm going to use the sun in my favor and go for an hour long walk soon and then do an hour of exercise in my room. I was going to go to the gym tonight but the boyfriend found out he has to work late tomorrow so he's not going to be up for the gym tonight but we will go tomorrow night. I've changed our gym days around since Sunday workouts are just too hard to make it to by 7pm. Most people I know run errands and get stuff done around the house on the weekends so it is a bit ridiculous to me that a gym closes are 7pm and doesn't open until 7am on a weekend day. They said they're trying to extend the hours on the weekends and I sure hope they do! Also wish they had more parking spaces... we went to the gym Tuesday and were stuck driving around for 10 minutes looking and waiting for parking when one space finally opened up in front of us. There were about 8 cars doing the same thing we were doing and the gym was so packed again that there were lines forming for the weight machines and some of the cardio machines.
