Green Veggies I Like

It's pretty simple. There's a strong correlation between how many green veggies I'm eating and how well I feel and how much I weigh. And I really like green vegetables so it should be easy to eat a lot of them, right? Wrong. Somehow it seems I find myself in these phases where -- for weeks at a time -- the veggies just drop out of my diet, generally replaced by simple carbs. Then when I realize it and go to make adjustments in my diet, I'm momentarily befuddled: what do I eat? Well, hopefully this list will help me to remember that I ABSOLUTELY LOVE:

Broccoli and cauliflower
Cabbage
Kale
Brussels Sprouts
Arugula
Romaine

Edited to Add:

Asparagus!
Peas!
Spinach!
Chard!

I've been eating broccoli like it's going out of style. Roasted with garlic oil until a bit crispy and tossed with salt and pepper. OMG, I had a big bowl of it for dinner last night and it rocked my whole universe. So, note to self: SELF -- you love your green vegetables! Eat freely of them and prosper!!!

    I am not a big green vegetable eater. I especially don't like leafy vegetables for some reason that I cannot figure out. I think it has to do with how boring I think salads are. if I eat a salad the way I want, it is so loaded with cals from the add ons that I might as well not have a salad at all emoticon

    Super! I have fresh asparagus I'm going to roast tonight. I also love SPINACH and put it in everything from omelets to quiches to soups and salads!

    Roast broccoli with garlic and olive oil, then when it is done squeeze the juice of half a lemon over it and sprinkle a little parmesian cheese on top. Life changing!

  girl you are lucky that you like vegetables. i feel as if i am a kid all over again when i have vegetables on my plate i am forcing myself to eat them, but this go round instead of my mom forcing me to eat them i am forcing myseft to eat the vegetables oh how i live for the day i want to to eat vegetables and not force to eat them.
