salad days

Someone recently said to me, "salads always taste better when someone else makes them". I never thought of it that way, but it's true. A $10 salad at my local restaurant always tastes better than what I make at home for pennies.
That is a challenge to me, and I keep trying to make a delicious salad at home. I find that the more ingredients, the better. It's a good way to get my 5 servings of vegetables. Some of my favorite salad components: Romaine, Red or Green Leaf Lettuce, sliced brussels sprouts, kale, beets, carrots, red onions, cucumber, bell pepper, celery, mushrooms. I like to include some type of cheese, either blue, or feta, or parmesan. Instead of croutons, I like some toasted nuts for extra texture.
Dress it simply with vinegar and olive oil and you have a meal.

    I love all the salad ingredients you use!! One easy salad that changes things up for me is a mix of baby spinach and spring greens with red onions, craisins, toasted almonds or pecans and blue cheese!! The craisins add a great sweetness to offset the savory cheese and onion. But I have to be careful because they also add a lot of calories! emoticon

    I like a lot of what you've mentioned, except the brussels sprouts! I am always switching up the ingredients I put on my salad, depending on my mood or what I have on hand. I like tofu, chopped egg, garbanzo beans, kidney beans, peas, carrots, celery, edamame, green beans, green pepper...so much variety!
