Grandma's Country Brunch

Hello Sparkfamily! Here is a breakfast/lunch that my Grandma always made and it is so good! Take a look!


Ingredients~

6 slices bacon (turkey bacon can be used!
3/4 cup chopped bell pepper
1/2 cup chopped onion
6 cups frozen hash browns
1 tsp salt
1/4 teaspoon pepper
6 eggs
1/2 cup shredded Cheddar cheese


Directions~

Fry bacon and save drippings. Cook pepper, onion, potatoes and salt and pepper, covered, for 10 minutes in bacon drippings. Lift with a pancake turner to flip over and cook 10 minutes more.
Make 6 indentations in the top and break an egg into each. Cover and cook about 3 minutes. Sprinkle with cheese. Crumble bacon over the top. Cover and cook until the eggs are done, about 5 minutes. Enjoy!

    Rose, can you hear me swooning from here? This looks deeeelicious! emoticon And when it comes to containing everybody's favorite breakfast treats, this one has 'em all! My own one living grandma used to make the best waffles (and everything else) on the planet - I guess it was her waffles I remember most. It seems I took a visual-and-taste snapshot of her little 1930s-era kitchen of the time I happily sat at the table, enjoying those goodies as perhaps a six-year-old :) Thanks for the memories!     My family makes something very similar. We call it Farmer's Breakfast. We used a slice of ham diced up, bell pepper, onion, potatoes. The eggs are different though. We scrambled ours and poured them over everything, let it set and softly scramble everything all together. Yummy!!
