Meatless Monday

I try to have one meatless main dish each week, and this week I made a macaroni and cheese dish with lots of added vegetables. I used whole wheat rotini, drained stewed tomatoes, sauteed onion and celery, and some frozen peas. I always save the water I cook vegetables in, and used it as part of the liquid for the cheese sauce (low fat cheese and skim milk). We had broccoli and cherry tomatoes with it, for a nutritious, colourful dinner.

Knowing that tonight would be meatless, I used extra protein at lunch time, with our own version of egg mcmuffins with low sodium turkey bacon. We both drink milk at lunch time, so our protein was okay for the day.

We normally have fish Tuesdays and Fridays, pork once a week, chicken probably twice, and lean beef once.

That sounds delicious!!! My husband loves meat for at least one meal/day, but he also gets cravings for pasta, so I think that he would eat this meal and NOT feel like he was missing anything.
Your meals always sound so good. Do you enjoy cooking? Are you self-taught or did you take classes?
I taught classes in Nutrition and Meal-Planning for years and am always curious when I meet someone who is so creative with their meals.

    Sounds really good! I eat meatless about half my meals, but it is really nice getting a good variety

    DH and I eat meatless quite often. Vegan cooking can be quite tasty, I could eat Vegan all the time, but DH still thinks he needs meat.
