Hello Sparkfamily! Here is something that I know you will enjoy from my kitchen to yours! Take a look!
1 large egg
1 dash pepper
1 dash salt
1 lb ground turkey
1/2 cup chopped green bell peppers, diced
1/4 cup bread crumbs
8 small mini bagels
Mix turkey, egg, bell pepper and bread crumbs to a meatloaf consistency. Salt and pepper to taste.
Form into mini patties (to fit bagels), and cook until done.
Put a patty onto each bagel, top with low-fat cheese if desired, and broil for 2-3 minutes.
I topped ours with guacamole and alfalfa sprouts, but you can add whatever veggies you like.
Note: I cooked the meat patties in my rotisserie, but they could easily be cooked on the grill or stovetop with a little olive oil. Enjoy!
