Making the yum!

I decided to stop wasting time surfing the internet and being lazy and do some yummy fresh cooking tonight! I had to clean the kitchen anyway so I figured why not dirty it up again as quickly as possible, right?

So here is the process of my brain (no recipes going on here, just tossing stuff in the pan and seeing what sounded good)

Drain the olive oil out of 2 cans of smoked sardines into the pan, add a pat of butter and heat until it is all sizzling. Add a big scoop of minced garlic and let it brown slightly but not burn. Add to the pan 1/2 eggplant chopped into 1 inch cubes and 3 chopped spring onions, sprinkle with salt and stir well to coat. Cook until the eggplant starts to get brown. Pour in the last 1/2 cup of red wine from the bottle on the bar, add a can of diced fire roasted tomatoes, 5 slivered baby bell peppers, the sardines and simmer until the eggplant is cooked through stirring occasionally to break up the fish. Add a couple spoons of the pasta water at some point and let the sauce simmer until the excess liquid is reduced. Squeeze the juice of a whole lemon over it, add a bunch of South African Smoked Seasoning from Trader Joe's, a hefty bit of sea salt, a few glugs of balsamic vinegar, and a couple big handfuls of chopped basil and stir it all together to wilt the basil. Toss it with the drained, cooked pasta so it coats everything well and serve with a sprinkle of parmesan cheese and another crank of Himalayan Pink Salt.

Dinner! That's the way I cook from the hip. Fresh, delicious, relatively cheap, makes me feel clean and my tummy happy! Calories? Honestly I don't know and I feel like calculating it would be mind numbing. I am not binging on pasta though, and everything in it is healthy and quality nourishment. This is a dinner I feel good about!
