IFinally I've found what, for me, is the ideal lunch solution. I decided to combine some unsalted pepitas with sultanas yesterday, and just sit and nibble on them, rather than having to face a plate of something I really didn't feel like. It was wonderful, I really enjoyed such a treat-like lunch, and followed it with an apple.

Just one serving of 50 grams contains 84% of the magnesium I need each day for my Heart Healthy Nutrition Plan, 76% of my iron, 25% of my Vitamin A, 32% of my Vitamin K, 15% of my folate, 25% of my protein, 32.7% of my fat - something I struggle with getting enough of daily, believe it or not, of which 17.9% is saturated. All that, packed into those tiny, green, tasty seeds!
I love to sprinkle them over the top of a salad, as well as eating them with sultanas for lunch, so that 50 grams is divided equally between the two meals.

Amazing that something so enjoyable can pack such a nutritional punch.

So glad you found a "happy lunch!"

When I first started dieting (back in my teens...yes, I have struggled for a long time), I always avoided eating nuts because I know they are high in fat. But after being on sparkpeople, I discovered that I can eat them and still stay in my calorie range. Yesterday I had 1 oz of almonds and 2 tablespoons of peanut butter!! I love peanut butter on celery with just a few raisins! YUM!! I eat nuts every day! Good fat is needed in our diets.

So press on with finding new foods that are good for you and taste good! emoticon
Thank you for the sparkgoodie! I am so encouraged by you too! I am very glad you are here!! emoticon
