IFinally I've found what, for me, is the ideal lunch solution. I decided to combine some unsalted pepitas with sultanas yesterday, and just sit and nibble on them, rather than having to face a plate of something I really didn't feel like. It was wonderful, I really enjoyed such a treat-like lunch, and followed it with an apple.
Just one serving of 50 grams contains 84% of the magnesium I need each day for my Heart Healthy Nutrition Plan, 76% of my iron, 25% of my Vitamin A, 32% of my Vitamin K, 15% of my folate, 25% of my protein, 32.7% of my fat - something I struggle with getting enough of daily, believe it or not, of which 17.9% is saturated. All that, packed into those tiny, green, tasty seeds!
I love to sprinkle them over the top of a salad, as well as eating them with sultanas for lunch, so that 50 grams is divided equally between the two meals.
Amazing that something so enjoyable can pack such a nutritional punch.
