Hello Sparkfamily! Here is another one of my recipes using flaxseed! Take a look!
2 large eggs
1 Tbsp vanilla
2 Tbsps olive oil
1/2 cup chopped walnuts
1 cup whole ground flax
2/3 cup water
1/2 tsp baking powder
1/2 tsp baking soda
2 servings 1 packet sweetener
Ground 1 cup of flax seeds.
In bowl #1: add ground flax, baking soda and baking powder. Mix well.
In bowl #2: add eggs, water, oil, sweetener and vanilla. Mix well.
Add walnuts to dry ingredients.
Grease a microwave casserole dish - 8" diameter.
Mix both dry and wet ingredients together. Pour into greased microwave casserole dish.
Microwave on high for 5 minutes.
Turn upside down on to a baking rack. Cool. Turn over and serve slices. (Great with cream cheese & berries). Enjoy!
