Mashed Cauliflower

Tuesday, February 11, 2014

Hello Sparkfamily! Mashed potatoes can sure pack on the pounds so with that in mind, I have replaced them with a healthy alternative just for you! Take a look!

2 Tbsp extra virgin olive oil
1 dash sea salt
1 head medium cauliflower
2 fl oz water

Chop cauliflower into flourettes, boil until very tender (about 10 minutes).
Drain and place in a blender or food processor.
Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached.
Season with salt and pepper and/or chives to taste. Serve immediately. Enjoy!

What is your favorite veggie? Hugs, Rose:) emoticon

I love "smashed" cauliflower as my DH calls it-I do add about 1 T of parmesan cheese for a bit more flavor.

My favorite low starch veggie is green beans.

My favorite starchy veggie is corn.

My favorite veggie in the summer is . . . tomato and green pepper. In the winter, any kind of squash or root veggie.

This is such a good substitute for potates! My family loves it.

I'll try this. I've made cauliflower as my soup base, but have not tried it as a potato sub. GREAT idea!
