It's hard to believe that I managed to make dinner last night. I was so tired after work that all I wanted was to crash on the couch and sleep. But I didn't. I rested a few minutes, had a good healthy snack, then got to work on dinner. I pulled out what I needed to make the chicken burgers-ground chicken, panko bread crumbs, parmesan cheese, salt-free garlic seasoning mix. Set it all out, then went to get the kids. I asked my youngest to help me with dinner. He's a little chatterbox and so excited about helping and watching me cook that it keeps my energy up enough to get it done. So dinner went off without much of a hitch. I just couldn't find the baby carrots, so had a bigger salad.
And the best part-I lost weight. So yesterday was a good non-inflammatory day.
This morning I even remembered to put the pork in the slow cooker, so tonight's dinner is on the way. I have to pick up buns for tonight on the way home, but that I can pick up at the store near our house, so not a big deal. Biggest challenge tonight is going to be remembering to pull out chicken to thaw for Friday night.
Hubby wants to make dinner on Saturday. I think he's nuts. He's gotten on one of his wild hairs as he calls it. He wants to make a bacon burger dog and swears this was mentioned all the time on the old Cosby show. Um, right. Don't remember that. He was reminded after watching Rachael vs Guy Celebrity Cook Off (thanks Hershel Walker!). I told him to feel free to make himself one, but that I wouldn't eat it. Hot dogs are inflammatory for me and beef can be too. That just doesn't sound good enough to me to try. He looked all hurt, so I told him I would try one bite of his just to taste it.
