Hello Sparkfamily! Are you one that likes a good burger once in a great moon but do not like the calories? Well, you have come to the right place because I have a healthy and awesome burger for you without the guilt attached! Take a look at this!
2 cups vegetable skallops
1 cup parmesan cheese, shredded
2 Tbsp mayonnaise
2 medium eggs
4 Tbsps butter, melted
1 tsp dried basil leaves
1/2 tsp ground mustard
1/2 tsp thyme leaves
1 tsp olive oil
2 medium celery stalks, finely diced
1 medium onion, finely diced
Saute onion and celery in olive oil.
Add the rest of the ingredients except for the butter, and mix well.
Shape into patties, and place on a baking sheet coated with cooking spray.
Brush patties with half the butter.
Bake at 350 °F for 30 minutes, turning halfway through and coating the other side with the butter. Enjoy!
