Day 10: PaleoCon (Mark Sisson, Stefani Ruper)

Tuesday, February 04, 2014

Hey, everybody!

I'm jumping in early with this! Tomorrow morning, if there are changes, I'll adjust it then.

As I already said in my previous post, I'm excited about today!

These speakers: Mark Sisson, Stefani Ruper and Nora Gedgaudas are among the most knowledgeable out there in their areas of expertise.

I'd also like to take the time to say that of all the disciplines out there, I have never before encountered a community so eager to teach and share and help without asking for anything in return. It has cost me very little except the time it's taken to search and read and learn all that I needed in order to craft a lifestyle for myself and my family that we can life with forever, and that affords us health adn well-being beyond our imagining.

It is with that same spirit that I share with you here. I hope you'll all do the same as you grow into your own version of a best life.

As ever, I'm looking to hearing what you think!

Nora Gedgaudas

Primal Body, Primal Mind

Nora is a Portland Oregon nutritionist. Her book, 'Primal Body, Primal Mind' focuses on combining your body’s Paleolithic needs with modern nutritional and medical research for complete mind-body wellness. It was Nora's book, more than any other that convinced me this was the key to true and lasting wellness for myself and for my family. I have been hormonally deranged all of my life, and if food could restore me to wellness I was IN.

'Primal Body, Primal Mind':
♦ Provides sustainable diet strategies to curb sugar cravings, promote fat burning and weight loss, reduce stress and anxiety, improve sleep and moods, increase energy and immunity, and enhance memory and brain function
♦ Shows how our modern diet leads to weight gain and “diseases of civilization”--such as cancer, osteoporosis, metabolic syndrome, heart disease, and ADD
♦ Explains how diet affects the brain, hormone balance, and the aging process and the crucial role of vitamin D in cancer and disease prevention

Examining the healthy lives of our pre-agricultural Paleolithic ancestors and the marked decline in stature, bone density, and dental health and the increase in birth defects, malnutrition, and disease following the implementation of the agricultural lifestyle, Nora Gedgaudas shows how our modern grain- and carbohydrate-heavy low-fat diets are a far cry from the high-fat, moderate-protein hunter-gatherer diets we are genetically programmed for, leading not only to lifelong weight gain but also to cravings, mood disorders, cognitive problems, and “diseases of civilization”--such as cancer, osteoporosis, metabolic syndrome (insulin resistance), heart disease, and mental illness.

Applying modern discoveries to the basic hunter-gatherer diet, she culls from vast research in evolutionary physiology, biochemistry, metabolism, nutrition, and chronic and degenerative disease to unveil a holistic lifestyle for true mind-body health and longevity. Revealing the primal origins and physiological basis for a high-fat, moderate-protein, starch-free diet and the importance of adequate omega-3 intake--critical to our brain and nervous system but sorely lacking in most people’s diets--she explains the nutritional problems of grains, gluten, soy, dairy, and starchy vegetables; which natural fats promote health and which (such as canola oil) harm it; the crucial role of vitamin D in cancer and disease prevention; the importance of saturated fat and cholesterol; and how diet affects mental health, memory, cognitive function, hormonal balance, and cellular aging. With step-by-step guidelines, recipes, and meal recommendations, this book offers sustainable strategies for a primally based, yet modern approach to diet and exercise to reduce stress and anxiety, lose weight, improve sleep and mood, increase energy and immunity, enhance brain function, save money on groceries, and live longer and happier.

Christian Page, Executive Chef
Whole Lamb Roast

Christian and his family tended to a bounty that included multiple vegetable gardens, patches of blueberries, raspberries, and asparagus, wild blackberries and strawberries, egg laying hens, apple trees, bee hives, and even a potato patch in his childhood home in Stamford, Connecticut. It was that juncture that he discovered his early inspiration and intuition with regards to the importance of fresh, thoughtfully prepared foods, and how the quality of a meal could be traced back to the origin of the food.

His drive inspired by this abundance of outstanding food was compounded by a passion for cooking instilled in him by his parents and grandparents, which led Christian to pursue a career in food. From the age of 13 he has seen many aspects of the business; from bussing tables and washing dishes in local restaurants to working in some of New York City and Los Angeles’ finest establishments.

Christian honed his vision and execution of his current venture through diligently exploring California while pursuing his MBA in Entrepreneurship at USC. Taking long trips up the coast and through the valleys of California, he familiarized himself with the slow food communities and artisan producers of northern and southern California.
At Short Order Christian will carry out Amy’s vision and ensure that her vision is realized, sticking to his guns and making sure that their shared food philosophy is never compromised.

Christian’s food philosophy:

“The care one puts into cultivating ingredients is as important as the care that one puts into preparing them. The knowledge required to thoughtfully prepare ingredients is as important as the knowledge required to holistically appreciate them. Having these elements in harmony is essential to the quality and enjoyment of the end product… and that’s how you make fully traceable ‘taste good/feel good’ food.”
