Day 3 - italian roasted vegetables

Day 3 was another good day :) I was down a full pound this morning! So that's 2 pounds in 3 days - Happy Dance

I changed up breakfast and had the blueberry pear compote with a little coconut milk. I like the flax seed granola but it's nice to have a change.

Lunch was broccoli soup and a side salad

Dinner was the roasted italian veggies with 2-3 oz of chicken.

Slice carrots, zucchini, mushrooms and red onion, add broccoli and toss with minced garlic, italian herbs and olive oil. Bake for 30-45 mins at 350F.

    Wow! Looks so good! I forgot to add onion, now that I look at your pic, I realize my mistake! What would I do without you! LOL

    Those roasted Italian veggies look delicious! I've done a lot of roasted veggies, but I haven't added Italian herbs before. I'll have to give that a try just to mix things up a bit. I'm so glad you share your stuff, cuz I get such good ideas from you, even if it takes me a bit to get brave enough to try them.

    It all looks so good. I remember that pear blueberry compote - with coconut milk and chia seeds? All The Plan recipes are good.
