My husband always makes chili for Superbowl Sunday. I knew this yesterday as he began his pot.
Today, I worked backwards. First tracked my dinner - chili and cornbread. Then I figured out what I could have for breakfast and lunch. Since I like a more filling breakfast, I knew lunch would have to be on the lighter side. I put lunch off for a bit so I would not be starving at dinner. Lunch was a most satisfying bowl of baby spinach, a little bit of goat cheese (less than an ounce), strawberries and blueberries. It was topped with a little bit of olive oil (1/2 teaspoon) and fig balsamic vinegar. It was so wonderful! My husband even had a couple of bites and loved it! He's not a fan of goat cheese so next time I make it for him I'll use another cheese.
So bring the game on! I'm ready!!!!!!!!!!!! Go Broncos (even though I don't really care since the Giants or Packers aren't in it).
