Getting on track

Friday, January 31, 2014

Did ok today - opted out of bread at our clinic lunch and went with self-made lettuce wraps with roast beef! Fewer calories and no carb slump! But I did go a bit overboard with the chips :/

Looking forward to Paleo. My dad made a great meal tonight - mom had fried up some eggplant so he used the leftover oil (tiny bit) to sautee onions, garlic, butternut squash, brocolli and black beans - it was smoky and rich tasting. YUM. They keep kosher at home so don't eat meat/chicken because it's too expensive to buy it kosher. They do eat fish. So we often eat vegetarian-type meals. YUMMY!

At my parents' house now, so going to sign off and enjoy our evening. Will catch up later.

I had Italian beef today. It was good for a change.

Fish is my favorite protein.

I need to try lettuce wraps. They always look so good in pictures. Nice to spend time with family as well.

Sounds like a really nice evening.

Great lunch, too... the potoatoe chips aren't the worst thing you could have eaten! :)
