Pineapple Chicken Fried Rice Recipe (Kensho & MistyMountains)

Ok, this was so yummy to me. Kensho and Misty Mountains expressed interest in the recipe but I hadn't invented it yet! Well now I have so here it is:

I made this from leftovers from a previous recipe.

1 recipe Hawaiian Chicken Kabobs, chopped

2 cups cold cooked rice (I cooked rice the night before, laid it out on a paper plate to cool, then stashed it in the fridge. Hot rice will not get you the same texture as cold.)
2 T dark soy sauce
1 T peanut oil
1 cup onions, diced
1 clove garlic, minced
1 cup frozen peas
2 eggs, whisked

In a LARGE non-stick skillet over high heat, heat the peanut oil until it "shimmers" but is not smoking. Toss in onions and let sit, not stirring, until slightly browned but still crunchy. Add garlic peas, rice, chicken kabobs, and soy sauce, toss to heat through and combine, 3-4 minutes. Push the mixture to one side of the skillet, add eggs. Cook the eggs until set, then toss through the rice mixture.

Almost as good as Chinese restaurant fried rice!

    Sounds good, but I have a hard time with fried rice. Think it's residual from my stomach surgery. LOL.
