Veggies Coming Out of My Ears!...

I have added TONS of super veggies to my diet. I am still on a quest to find recipes for my "Ninja". It is a beefed up blender. Yesterday morning I threw a carrot, apple, tomato, kale and flax seed in. It was too thick and too sour. I had a hard time with the veggie idea first thing in the morning - I love my oatmeal & fruit!

Last night I soaked garbanzo beans in water. Tonight I made Roasted Red Pepper Hummus (sparkpeople recipe). It came out perfect!

We went to Firebirds for lunch. I had a grilled vegetable kabob. It was delicious and quite filling. I looked the nutrition facts up on line, all numbers looked great except for sodium! I really have to get into the habit of saying "no extra salt" when I eat out! The waiter told me the chefs put a lot of salt on everything.

Today there was a Vitamix salesperson at Costco. He used hot water when preparing his veggie drink. It tasted wonderful! Just like soup. I bought the spices he was selling. The first ingredient is sea salt, so I will be using it sparingly. And now that I have it I will know which spices to use on their own in the future!

I was also lucky enough to have my Sparkbuddy MBTEPP share her veggie juice recipes with me. She juices a lot. Here is what she sent me:

I went into my archives for some recipes, but once you get the hang of your juicer, you will be combining your own flavors. Go easy on ginger root, as it over powers most flavors. I love cilantro and parsley in everything. Kale is a must.

Dr. Oz's Green Drink (very good)
Many people have asked us, so here it is, the drink Dr. Oz swears by! This "green drink" is high in fiber, low-calorie and rich in vitamins. You can make this in a low speed juicer or combine all ingredients in an Omega blender.
2 cups Spinach
2 cups Cucumber
1 head of Celery
1/2 inch of teaspoon of ginger root
1 bunch parsley
2 Apples
1 Lime
1/2 Lemon

The Hulk (My Favorite)
Omega's ultimate green juice recipe! Enjoy!
2 Stalks Celery
1 Cucumber
1 Apple
1/2 Lemon
Ginger
1/2 Green Chard Leaf
Cilantro
3-5 Kale Leaves
1 Cup Spinach


Green Juice (I always added 1 fruit for sweetness, apple or pear)
1 cup Spinach
2 cups Kale
2 Cups Parsley
1 Cucumber
1 Celery Stalk

Kale Green Juice
Of all green leafy vegetables, kale is the most nutritionally dense.
3 Carrots
1 Apple
3-4 Celery Stalks
3 Cups of Kale


Berry Juice
2 Cups of Strawberries
2 Cups of Blueberries
1.5 Cups of Raspberries

Apple and Beet Juice (less in more when using beets)
1/2 Beet with Greens
3 Apples
Wash thoroughly and remove apple stems.

Veggie Juice
1 cup of spinach
1/2 cucumber
2 stalks of celery
3 carrots
1/2 apple
Juice cucumbers with their skins on. The dark green skin is a great source of chlorophyll, a phytochemical that can help build red blood cells. Make sure to wash them before juicing.


Heartburn Eliminator (DH favorite)
1 Cup Spinach
6 Carrots

V8-ish Juice (love this one)
1/4 cup water
2 tomatoes
2 cloves garlic
1 handful spinach
2 carrots
1/4 sweet onion
2 celery stalks
2 tsp. lemon juice
1-2 shots hot sauce
