So I've convinced several of my colleagues to do this challenge with me, and last night we had a little potluck.
Buffalo "chicken wings" (cauliflower--really yummy), tofu ranch dressing, vegan cheese (cashew based--kind of weird) crackers, apples, hummus, pita.
Rice and chili (in the bowl), chickpea and butternut squash curry, Thai red curry.
we also had banana bread and homemade nutella, and lemon date bars for dessert.
