hard to believe it's been over a month since I've blogged, but I have been truckin' with low cal low fat recipes in the interim. it's just finding the time to write them.
so today was broccoli soup. usually made with cream or milk and with cheddar cheese.
instead, I started with "sautéing" the onion in chicken broth until it was clear (the broth evaporated) then I added the chicken broth and broccoli, with a couple pieces of carrot (for sweetness). let them cook and added fresh crushed pepper and sea salt.
when all was tender, I stirred in just a little 2% milk after using the immersion blender on the veggies.
when I spooned it out, I had a little bit of crushed tortilla chips and shredded cheddar cheese I piled in the middle of the bowl. 6 grams cheddar cheese and 5 grams tortilla chips. hot, tasty, had a little crunch and a little cheese. saved lotsa calories and fat.
