Good Meal - From Start to Finish (2014- Blog #25)

Saturday, January 25, 2014

I recently discovered halibut. Super easy fish to cook and the taste is sublime. I actually do not like cooking fish because I am afraid that I will undercook it and make us sick or I am afraid I will over cook it and have to take out the steak knives to cut it up! I discovered the cookingfishmonger.com and instructions for cooking fish have really helped build my confidence.

Here is a recent yummy dinner with halibut. No specific recipe, just a simple dish of halibut with rice and veggies. I love just making it up!

I started with scallions, small tomatoes for the fish and fresh broccoli for the side:

I use as much of the stalk of the broccoli as possible by slicing it up and steaming it with the rest of the broccoli:

A fresh squeeze of lemon for the scallions and tomatoes makes for the zesty companion for the fish.

A nice set of rectangular plates for a pleasant presentation:

Dinner - the closer up:
Pan-seared Halibut; Zesty Tomatoes & Scallion; Simple Rice with Parsley; Broccoli and Garlic

Nice job on the Halibut. I was hesitant about cooking fish at the beginning. I must cook it 4 times a week now. Not so fishy!! Enjoy, and eat more of it, so easy to make. I buy what is on special.

A friend brought around a gurnard she caught yesterday! I cooked it for DH's dinner.
I gave her fresh eggs from my chickens in return.

I love to eat fish, and because it is so delicate in flavor it leads me to have light vegetables to accompany it.
