I recently discovered halibut. Super easy fish to cook and the taste is sublime. I actually do not like cooking fish because I am afraid that I will undercook it and make us sick or I am afraid I will over cook it and have to take out the steak knives to cut it up! I discovered the cookingfishmonger.com and instructions for cooking fish have really helped build my confidence.
Here is a recent yummy dinner with halibut. No specific recipe, just a simple dish of halibut with rice and veggies. I love just making it up!
I started with scallions, small tomatoes for the fish and fresh broccoli for the side:
I use as much of the stalk of the broccoli as possible by slicing it up and steaming it with the rest of the broccoli:
A fresh squeeze of lemon for the scallions and tomatoes makes for the zesty companion for the fish.
