Are you a pinner? I am! Pinterest has some amazing ideas, recipes, tips and whatnot. I have so many boards that it's unreal. Since I started this low-carb diet I've been pinning some recipes to that board. I saw a picture of something that looked yummy and the description read " No carb dessert. Heavy whipping cream and a sugar free jello packet whipped in a magic bullet." I thought alright! Simple, only a couple of ingredients and looks yummy. It's worth a try. So I went to look up the recipe and guess what... no weblink. This is the one thing I hate about Pinterest.
I am not a fly by the seat of my pants when it comes to food. If there's not a recipe I don't even know where to begin. So I got to thinking about this one. So it says just heavy whipping cream and a packet of sugar free jello. Okay. So if to make jello you use 1 cup of boiling water then maybe I'll try just adding 1/2 a cup of heavy whipping cream and see how it turns out. I have a magic bullet so that was also a plus.
Well I got in the kitchen and flew by the seat of my pants... and it turned out really good. I didn't use my magic bullet ( didn't feel like pulling it out) but I used the Kitchen Aid stand mixer. Here's what I did...
1 packet of Cherry Sugar Free Jello
1/2 cup of Heavy Whipping Cream
A little less than 1 spoon full of Splenda (or your choice of sugar substitute)
I mixed the whipping cream and jello packet in a measuring cup, added my Splenda and mixed. I tried adding some Cocoa but I only did about a 2 spoonfuls and didn't even taste it in the end. Maybe next time I'll add more.
Then poured the entire mixture into the mixer and started whipping.
When it was done, since I couldn't taste any of the cocoa I did shave a little unsweetened baking chocolate on top of my portion. I wanted to go for a Chocolate Cherry flavor.
Give it a try and let me know what you think. You could use any flavor of jello you want.
So don't be like me and be afraid to just throw ingredients together. You never know what you will come up with. Some might turn out bad but others will turn out good.
