A baking failure of epic proportions today. I tried to make celiac safe pumpkin muffins today, the texture was great the taste was awful, you couldn't taste the pumpkin at all, just ginger and cloves. I'm going to do some experimenting for the next batch and try replacing some of the eggs with more pumpkin and apple sauce and replacing all the individual spices with pumpkin pie spice. Not only will this make the muffins healthier and lower in fat, but maybe they will actually taste like pumpkin.
I like this recipe, it's simple, doesn't call for 5 different flours and ingredients I would have to order online. That's the problem with most gluten free recipes, by the time you make them, you realize a batch of whatever it is cost you about $25 to make and the taste, well so far it's more miss than hit.
Sometimes though, you just want a muffin, or a cookie with your cup of tea so I am going to keep experimenting and when I find something that works freezing most of it so that when I do want a muffin I can just pull one out of the freezer.
As you may have already figured out today was a day full of cravings lol.
