I still have leftover enchiladas and onions/potatoes/cabbage and tomatoes so I only cooked chili this morning. I will probably end up cooking some brown rice and cranberry orange muffins tomorrow. I love having food in my fridge already prepped so I have choices about what I will eat. I must admit I have a hard time eating salads or smoothies this time of year. I end up cooking most of my greens and veggies in the winter. I think I just want food that warms me up. Bring on the casseroles and soup.
