Adapting

Don't you just love it when you have just finished all your meal planning for the week and you're all ready to go? You have your groceries, your cooking plan, even your cleaning plan! Then someone calls with a sudden change in plans.

That happened to me yesterday. I was all set to have pork chops for dinner last night when I got a call from the school. Sudden addition of a program to the schedule that we needed to attend last night. Complete with dinner. The good news is that the dinner was something I could eat safely, so I planned on it. That means everything else gets moved around. We had barbecue for dinner at the school. I had a little slaw, but no potato salad. I had a green salad after getting home to complete the meal.

So now the plan for dinners falls thusly:
Tonight-pork chops. I'll marinade them before I go to the PTA and cook them when I get home. The kids will be having either quesadillas or sandwiches, so they won't have to wait.

Tomorrow will be chicken with apples, mushrooms and sauce in the slow cooker.

Saturday will still be the pasta and marinara sauce. I'll be picking up a spaghetti squash to go with the pasta, too.
