For dinner today made tomato soup. Sadly my soup wasn't as good the stuff you get from the can, I'm thinking it was either I didn't have enough tomatoes or the tomatoes weren't of the best quality, not like the ones you get in the summer. Or that's what I get for buying the sale ones. Oh well. recipes.sparkpeople.com/
To go with the soup I made mushroom and spinach penne. recipes.sparkpeople.com/
Used the recipe as a base, instead of 6oz used 12 oz pasta, 8oz mushrooms instead of the 4oz and used frozen chopped spinach instead of the 4 cups fresh spinach. Also added 1T butter and 3 ladles of the pasta water since the recipe doesn't have any type of sauce. I think next time I'll a add a tablespoon of flour to make a thicker sauce with the pasta water.
