I am not a huge fan of flour tortillas, but I love corn tortillas. Let me count some ways. 1. Layered enchiladas- cook up your favorite veggies/beans and layer them with corn tortillas topped with enchilada sauce or salsa. 2. Tostada-heat up a couple of tortillas and some refried beans/corn. Put a corn tortilla on plate and top with beans and corn. Repeat. Add some shredded cabbage or lettuce, chopped tomato, avocado and salsa and yum. 3. Tacos-heat up your tortillas in a cast iron skillet and fill with your favorite filling. I love a mix of cooked cabbage, potato, onions with salsa OR lentils cooked mexican style with shredded lettuce, tomato, avocado and salsa OR refried beans and veggies. 4. Tortilla roll-up-I love refried beans with some salsa stirred in rolled up in a corn tortilla. I usually buy my tortillas, but home-made ones are easy to make and super delicious.
