Honey Roasted Pumpkin

Hello Sparkfamily! I love pumpkin do you? Here is an awesome side dish that I think you would enjoy!


1 dash pepper
1 dash salt
1 Tbsp olive oil
3 cups pumpkin, cut in large pieces
1 Tbsp honey


Preheat oven to 375 F.
In a bowl, pour oil and honey over pumpkin. Toss well.
Place in an ovenproof dish and season with salt and pepper.
Cover loosely with a piece of foil and roast for 40 minutes.
Remove foil and bake for a further 20 minutes, or until pumpkin is golden. Enjoy!

    I'm not a big pumpkin eater, but I use a similar recipe for butternut squash and add cinnamon, nutmeg, and cayenne. In fact, with the seasoning, it actually tastes much the same as sweet potatoes and I would think pumpkin as well. GREAT MINDS! emoticon
