It's time for my now annual 28-day VEGAN CHALLENGE! Anyone want to play along at home?

Last year I did a post-holiday month of vegan eating. I lost about eight pounds without really trying, and I found that it made me very aware of what I was actually putting in my body. It was occasionally frustrating, and certainly difficult to eat out with friends, but it's only 28-days, and my friends are pretty understanding.

So I was wondering if anyone wanted to join me? I am going to start next Monday, the 19th, which will give me time to go to the grocery store and do some menu planning. At least one of my colleagues is going to join me, which will be fun, because we can take turns making lunch for each other.

Expect a lot of blog posts about beans and lentils!

    I've been vegan for two years and I'll be glad to help you along the way with anything you want. I can't "join" you as I'm already doing that :p but of course we're together in this! For amazing recipes you may want to check ohsheglows.com or happyherbivore.com or http://blog.fatfreevegan.com/ .
Make sure you have lots of veggies, especially in green salad form, to boost nutrition. Fruits, legumes and grains are great and delicious too. You could try soups and stews now that the weather permitts it. Make sure you have 1Tspoon of flaxseed everyday to get omega 3s and other valuables, but limit your nut consumption now that you're trying to lose weight.
There are a few vegan/vegetarian sparkteams too in case you want to join for encouragement/ tips.

    Good luck! It's so hard for me to get in enough protein with MEAT, I don't think I have the energy to try this. I admire you, though! emoticon

    Hey, way to go with this! I look forward to reading your blogs!
We're about 50% vegetarian in our house and I have tons of vegan recipes because of my daughter's life-threatening allergy to milk, but I don't feel I can commit to joining you on this because I need DD to get as wide a variety of other foods as she can get, and that includes meat. Not sure I'm up to making different meals for everyone...but as I say, I will follow your progress with interest!

    I'd be interested to see how this goes for you. I am unsure I could cut out all meat but I've been cutting it out more since learning about better ways to eat. Good luck!

    I'm a vegetarian, and I try to go vegan a couple of times a week. So I will be looking forward to your blogs, and I'll try to have an extra vegan day or two each week!
