Last year I did a post-holiday month of vegan eating. I lost about eight pounds without really trying, and I found that it made me very aware of what I was actually putting in my body. It was occasionally frustrating, and certainly difficult to eat out with friends, but it's only 28-days, and my friends are pretty understanding.
So I was wondering if anyone wanted to join me? I am going to start next Monday, the 19th, which will give me time to go to the grocery store and do some menu planning. At least one of my colleagues is going to join me, which will be fun, because we can take turns making lunch for each other.
Expect a lot of blog posts about beans and lentils!
