Meatless Monday

Full disclosure: I'll never be a vegetarian (and we won't even discuss vegan). But starting next week, I'm going to start following the Meatless Monday idea. Now that I'm getting the CSA boxes again I'm going to have some amazing veggies. I already have brown rice, quinoa, etc. And I always have things like milk and ricotta on hand.

I'm a good cook. I have a lot of yummy vegetarian recipes. And I grew up on meatless Fridays, so it's not a stretch at all.

Let's see -- Ted Allen's savory bread pudding for dinner next Monday, perhaps?

    I liked your blog and your full disclosure! I have to laugh because I have been a veggie girl for 17 years and can't imagine ever eating meat! We balance each other out! Good luck with meatless Mondays!

    We are meatless one day of the week. It isn't that hard and does increase the amount of fruits and vegetables.

    I try to go meatless 2 days a week.I like getting my protein through dairy but try to stick to non fat stuff.

    That savory bread pudding sounds awesome! I grew up with a meatless Friday as well and it wasn't a problem at all.

    You're an outstanding cook! I think you're going to find that you anticipate Meatless Mondays joyfully. I usually eat a vegetarian diet (some milk products)... That's when I feel best and have the least depression. It's when I binge-eat that I feel great for a few hours and then the depression hits... emoticon
