Hello Sparkfamily! I am making this for dinner this evening along with chicken that we are grilling! It is so yummy and good for you! May I add, dinner is at 6:pm!
1 3/4 cups black beans
2 oz smoked mozzarella
1/2 tsp olive oil
1/4 cup cilantro
juice of half a lime
1/3 medium bell pepper, chopped
1/2 cup red onion. chopped
2 medium ears of corn, kernels only
1 tsp cumin
1 dash pepper
1 dash salt
1/2 whole tomato, chopped
In a large bowl combine lime juice, olive oil, beans, cumin, and salt and pepper to taste. Set aside.
Heat a nonstick skillet over medium-high heat, add corn and bell pepper and pan-roast, stirring occasionally until lightly browned, about 4 minutes. Remove from heat and let cool.
Stir corn, peppers and remaining ingredients into black bean mixture and toss together.
Chill until ready to serve. Divide evenly into four salad bowls. Enjoy!
