Ok well haven't really done any of the resolutions I had set up for myself, but hey I'm a work in progress!

What I have done is made up a menu for this week, I am going to have to really keep up with this. Also probably going to have to made a prep day so there are no excuses during the week.

This week's dinner menu:
Monday: Ham and cheese quiche with a french onion soup

Tuesday: Roasted cauliflower or broccoli salad (broccoli is on sale, if cauliflower isn't too much might do a combo)
Beanless chili

Wednesday: Apple stuffed pork chops with garlic herb potatoes

Thursday: Mushroom and spinach penne with tomato soup. Grill cheese for Mom since she doesn't like mushrooms or spinach and doesn't like penne noodles, she has to be picky like that.

Friday: Chili stuffed baked potatoes with cucumber salad

Saturday: Oven fried pork chops with baked potato soup and sauteed garlic mushrooms

I am not sure if anyone else has gone through this but I am just sick and tired of leafy cold salads! Kept on forgetting that not all salads are made with lettuce, super excited for roasted vegetable salad. Nothing like roasted veggies! I really need to start eating breakfast and lunch. Not just live off of coffee until dinner or will have more blood sugar crashes. I'm not diabetic and not pre-diabetic either but have had a problem with blood sugar getting to low. Happened yesterday while I was at the grocery story, my sugar started crashing and then all of a sudden all the junk, processed, sugary foods that I normally pass looked oh so good and I just wanted to slide them all in my cart and go to town on them like a mad fiend!!!!! BUT I didn't! Well it was late so I got some bad frozen food for dinner that night, even more of a reason why I need to stick to my menu this week! Means I need to run to the other grocery store to get the rest of the items on my shopping list.

    I think a lot of Spark people might want to come for dinner! emoticon I sometimes make a Waldron salad...Apple's, nuts, celery, raisins with Greek vanilla yogurt when I want something different from t green salad. Blessings on your 2014 journey. emoticon
