Peanut Butter Apple Breakfast Quinoa

Peanut Butter-Apple Breakfast Quinoa
adapted from Oh Shine On

Ingredients:
1 c. red or white quinoa, rinsed
2 c. water
1/3 c. peanut butter
2 TBSP honey, plus more for drizzling
1/2 tsp. ground cinnamon, plus more for sprinkling
1 large or 2 small honeycrisp apples, cut into bite-sized chunks

Directions:
1. In a large saucepan, bring quinoa and water to a boil. Reduce heat to low, then cover and simmer until quinoa is tender and tails come out, about 15-20 minutes.

2. Remove quinoa from heat. Stir in peanut butter, honey, and cinnamon. Top with apples, then drizzle with additional honey and sprinkle with cinnamon. Serve immediately.

Yields: 4 servings

many other possibilities--banana instead of apple, almond butter with peaches and cherries, and so many more.

  Sounds good. Can you see me an e-mail, or post here where I can find Quinoa for a reasonable price ( maybe bulk) ? I thave had it 3 times, but it was 5-6 dollars a tiny box.Thanks! emoticon emoticon
