Balsamic Vinegar Broiled Salmon Fillets

Hello Sparkfamily! Salmon is on the menu this weekend! Take a look!


Ingredients~

4 fresh salmon fillets or snapper, haddock or trout
1/4 c. balsamic or red wine vinegar
2 tbsp. olive oil
Freshly ground black pepper
3 tbsp. chopped fresh mint or 1 tsp. dried coarsely ground salt
Lime wedges for garnish


Directions~

Heat broiler. Place salmon skin-side down on broiler pan. Combine vinegar and olive oil and brush on fish. Sprinkle evenly with freshly ground black pepper. Broil about 6 inches from source of heat for 7 minutes or until fish just flakes when tested with a fork. Sprinkle immediately with mint and season to taste with salt; garnish with lime wedges. Makes 4 servings. Enjoy!

    Love the recipe and Certhia's suggestion for a side. We have a way-too-big assortment of balsamic vinegars at home since an Under the Olive Tree store opened near us, so we're always looking for opportunities to use them.

    This sounds delicious! And I have just the perfect vinegar for it. Do you think caramelized small onions and wilted spinach will made a good side? or will a tart tomato-salad perhaps work better than sweet and earthy?
