Banana Blueberry Crustless Pie
1/2 banana sliced
1 cup frozen blueberries
1/4 c. old fashioned rolled oats
1 T ground flax
1/4 c. pomegranate juice (or reconstituted juice)
Mix and microwave 1 minute. Stir.
Microwave 2 more minutes.
Allow to cool slightly. It's very hot!
The juice that is released thickens and this turns out like a blueberry pie.
If you want it sweeter and have the calories available, add a tablespoon golden raisins or dried cherries to the juice and microwave 30 seconds before adding to the fruit/oat/flax mix
