Today begins a whirlwind of activities!! The cookies are made and ready for the trays which I'll put together soon. Presents have mostly been delivered and are sitting under the trees ready to be opened. Tonight my extended family will gather over my parents house for gifts and lots of food. Tomorrow morning is breakfast and gifts over my daughters and then a brief respite at my house for my husband and I to exchange gifts. Later waiting for guests to arrive for dinner at my house.
To make it simple this year, I already made a lasagna and froze it, ready to pop in the oven. The rest of the dinner is simple sides. We decided this year not to have several courses as there is just too much food. Since meat dishes are all year long, lasagna is special for the holiday. Naturally there will be Christmas cookies, apple and pumpkin pies. I made a special fudge for my daughter, a childhood recipe that I haven't made in years. At 40 calories each piece, I can even have one! It's going to be a great holiday!
