DECEMBER 17TH - "LUNCH"

This is the theme for today. Not much to say about lunch except that I always eat lunch during the week and sometimes on weekends. I am a 3 meal a day person- always have been.

For lunch during the week, I enjoy soups ( usually can ones that are low sodium/calories) & a healthy sandwich. Sometimes make salads on Fridays as have them for dinner the other nights of the week. If not having soup, then a piece of fruit goes with lunch.

Was thinking about trying my hand at homemade soups this winter. Will attempt a few different kinds after the holidays. Have made a good meatball soup a few years back and it turned out delicious. Will bring that recipe up to NY along with a minestrone that friends really enjoyed that I made for them. Both were healthy recipes so see what happens. Have to freeze them as they make a big amount. Never froze soup before so don't know what will happen to the taste/texture.

I am not an eat the same thing for meals kind of person. I like to change it up all the time. Funny cuz my food favorites tracker has tons of my foods I've eaten. Even change up my sandwiches with adding veggies or different kinds of mustards/mayo's/whole grain breads etc....

That's it- a lite topic to blog about. Healthy eating....til tomorrow....

    I have never been a soup person but I sure like to put a bunch of veggies in the crock pot with low sodium chicken broth ... I let them cool and usually get at least 3 tubs in the freezer for us later .... nice and easy meals .... roc
