Baked Stuffed Apples~
1/3 cup butter, softened
2 tablespoons maple syrup
1/2 cup chopped walnuts
1/2 cup raisins and other dried fruit
1/2 teaspoon of ground cinnamon
1/3 teaspoon salt
Juice from 1/2 lemon
1 cup apple juice
2 tbsp brown sugar
2 tablespoons butter, softened
Preheat oven to our 350F.
Trim the tops and scoop out the center and the seeds of each apple.
In a medium bowl, combine the butter and maple syrup, pecans, dried fruit, cinnamon, salt and lemon juice. Fill the apples with the mixture up to the top.
In a small bowl, combine the topping ingredients.
Set the apples in a medium pan and pour in the apple juice. Bake in the preheated oven for about 45 minutes or until tender and bubbly.
With a spoon divide the topping over the apples and place them back in the oven for 5 more minutes.
Transfer to serving dishes, top with vanilla ice cream and serve hot. Enjoy! Hugs, Rose:)
