I am taking back control of my out of control life, one little step at a time.
I found some great freezer to crockpot meals - and added some of my favorites, and some other things I thought would freeze well - and had me a cook fest this weekend.
First was the trip to the grocery store! I was lucky with some chicken and meat sales, and with 10 for 10 cans of beans and veggies. I bought enough stock for 12-15 meals.
Next was all the prep, I cut, I chopped, I stirred for over 3 hours! But in the end I have 12 freezer meals in my freezer, one sweet potato chili done and eaten (with a couple bonus lunches), and one northbean spinach soup in the pot for today! That's 14 meals!!! Go me. Go me. Happy dance.
Healthy easy to make - family sized freezer meals that all I have to do is defrost and crockpot! Woot Woot. This will save me a bunch of stress from having to run home and cook. Or have to depend on someone to remember to do something - for us to have dinner ready. Oh yeah. With the left-over factor and just a couple soup/sand or salad days, this will take me through to the new year with just a couple of fresh fruits, a side here or there, and toilet paper runs to the grocery store - No more big ol grocery store runs for me - well till January at least! So happy. And at an average of 10 per meal, I so scored on the grocery money too!
But best of all, I think I managed to find me a couple hours a week in cooking and grocery shopping time! And I FEEL IN CONTROL! Oh yeah, needed that feeling.
Time, budget, healthy, oh yeah. So far so good, now I will just have to keep track of what everybody likes and what we can not make again.
So I now have the food, dishes, and laundry under control..... I just need to hunt down some dust bunnies.
I also have to wait another week to sign up (or not) for my marathon, there were issues with registration, and the site went down. Sigh. I can do it. Classes end December 14th, I can dump some crazy students, sign up for my race, and hopefully chillax my way through the holidays.
That's the plan.
