A Successful Turkey Day!

It took at least six hour of preparation but our Thanksgiving was a smashing success. I made a big effort to include all the foods that our family has come to love at our traditional holiday feast. I took great pains to make it more healthy as well as nutritious. Here is what I fixed:
Turkey
Steamed broccoli
Steamed green beans
Spinach and romaine tossed salad
Whole wheat stuffing
Brown rice stuffing
Rolls
Scalloped potatoes
Mashed potatoes
Gravy (homemade)
Raw veggie tray
Regular pumpkin pie
Sugar free pumpkin pie
Sugar free pumpkin souffle
Whipped cream
Cranberry jelly (which never made it to the table)
Spiced apples (unsweetened)

I ate a small serving of turkey, brown rice stuffing, broccoli, a roll, spiced apples and some pumpkin soufflé. It was just enough and I felt satisfied. The guys cleaned up after dinner and the gals clipped coupons! :) At about 8 o'clock last night, I lay down on the bed to read. It felt great to put my feet up and just rest after working in the kitchen all day! Hubby woke me up about forty five minutes later and suggested that I might want to turn in for the night. He was so right! I slept like a log last night and am still a little tired today. It was a wonderful Thanksgiving!
