... Every Thanksgiving is bittersweet for me because although a lot of time has passed, I am still mourning the lost of my dad, mom, grandmother, best friend, cousin & others lost between October & January 1990 - 2005. However, I am thankful for so much and grateful that I am employed, have a home to live in, food to eat, a wonderful son, my fur baby "Jazzi", the few people in my life that I can truly call "my friends", my wonderful, supportive neighbors and my virtual friends on SP & FB. Yes, I have much to be thankful for.
I prepared a small dinner for me and my son. I didn't feel like cooking a lot so I bought an unsalted rotisserie chicken and prepared the following sides:
- whipped sweet potatoes with raisins (... sweetened with real maple syrup and stevia.. taste like dessert!
- corn bread stuffing
- macaroni and cheese
- string bean casserole with cream of chicken soup and fresh mushrooms.
- Greek yogurt/blueberries for dessert
... I deliberately didn't buy any dessert because I knew that I would not be able to stop with just one serving, and I actually enjoyed the yogurt/fruit for dessert. YAY
I weighed in at the same weight of 168, so no loss no gain. I know I have just started this process, again, and that it will take time. I didn't gain this weight overnight and I realize that I have to exercise discipline and patience. I can say though, that I truly enjoy eating healthy and since switching to stevia have found that if I keep my "house" in order and free of the things that cause me to binge, I can stay on track.
