Scalloped Sweet Potatoes and Apples

For years, I wouldn't eat sweet potatoes. With all the marshmallow, butter and sugar, they were just "YUCKY!"
Then I found this recipe, and discovered that sweet potatoes could be delicious (and healthful, too!)

four sweet potatoes (about 4 pounds)
four apples (about 1.5 pounds) cooking apples like Granny Smith or Rome Beauty are best
1/2 cup pecan halves or pieces
1/2 teaspoon ground nutmeg

Peel the sweet potatoes and cut into round slices about 1/2 inch thick. Peel the apples, core and cut into rings or slices about 1/2 inch thick.
Layer all ingredients in a casserole or baking pan...potato, apple, sprinkling of nuts, sprinkling of nutmeg, and repeat.
Put on the lid or cover tightly with foil. Place in a preheated oven. Bake at 350 for 45 to 60 minutes.
Makes 12 servings. These reheat easily in a microwave, too.

Now I eat sweet potatoes often! "YUM!"

    O my! That sounds delish! I just discovered mashed sweet potatoes with coconut milk, a dab of brown sugar, and cinnamon. O goodness! I thought I needed a smoke after devouring it! *LOL* Thanks for sharing~ emoticon BB~

    Looks amazingly simple- I will be trying this!
(I eat a sweet potato almost every day- cook up a batch (covered with a bit of water for an hour in the oven until VERY soft) and keep them in the fridge- I prefer them cold with just a dash of cinnamon-sugar).

    yummy. I wasn't planning to make anything for the work pot-luck (I'm contributing to the person buying the turkey & brisket) - but this sounds easy & good!

    I've eaten sweet potatoes all my life, but never with added sugar or's a texture thing with me. I have served this on many Thanksgiving buffets and people always ask for the recipe. The tart of the apple and the sweet of the potato...heaven on a fork!! Thanks for sharing!

    Have you put this in the calorie tracker thing on SparkRecipes? I'll have to see if this recipe is there. I don't normally eat sweet potatoes either but I'm willing to give this one a try.

    I like roasted sweet potatoes - and I like them cold too, weird, but that's how my dad used to eat them. But your recipe sounds delicious. I will have to try it!!

    im just happy with a simple half a sweet potato in the micro 5 mins. and a little healthy heart spread and a tablespoon of sour cream.. I would be to tempted to eat a lot of something that took a lot of time to prepare.
