30 Days of Thankful 2013 Edition- Day 21

Today I'm thankful for salad. I know it's crazy, but I could seriously eat salad every day. As long as it wasn't the same salad every day. And that's the best part about salad! There are so many things that can go into a salad and make it awesome so that you could have a different yummy salad every day UNTIL YOU DIE. Plus, what easier way to get in a ton of veggies and/or fruits into your diet. If you ate 2 cups of salad with your dinner every night, BOOM! That's like 2-3 servings of your daily freggies right there. It's a no-brainer. Keeping it to mostly freggies, vinaigrette dressings, a few seeds or nuts for some good fats, lean protein on top, and you've got a healthy meal. Salad, it should always be what's for part of dinner.
Chicken Chef Salad from a few weeks ago: grilled chicken breast, yellow cherry tomatoes, shredded beets, cucumber, purple cabbage, black olives, hard-boiled egg, and REAL bacon crumbles (none of that jarred crap- I cooked my own bacon THEN CRUMBLED IT), and some bleu cheese crumbles, topped with a bleu cheese red wine vinaigrette. YUM!!!
