Iron Turkey

Just having a little Pre Holiday preparation.
I've decided to make this upcoming week a healthy one so that I can enjoy some apple pie and pumpkin custard guilt free.
{...and I plan on sneaking some stuffing...but it's a secret...}
So today I made my black bean stew...this time with beef broth
and I realize that to me, it has a very pleasant umami taste.

I'm trying to make more healthy dishes with less meat and more veggies.
I see a huge difference in the way I look and feel when my plate more plant protein.

Woo Hoo to the healthy eating! I just love black bean soup. I made a big batch and just turned the leftovers into refried beans. Just mash the beans in a skillet with onions and garlic sauteed, add some water or broth and simmer about 15 minutes. Mash the beans with a potato masher about one cup at a time. yummy! emoticon

Yes, turkeys (according to Butterball) are thinner this year. Perhaps they are exercising more or maybe because they are not being pumped up with artificial stuff they are actually healthier both for them and US. emoticon

We already had our thanksgiving here in Canada and it was wonderful. At that time I bought 4 turkeys and the other day I roasted one (with Chef Meg's idea of the herb rstd turkey) and again it was so fabulous. I was careful about dessert (yogurt and jello) and used splenda to cook the cranberries. Now we are really enjoying the turkey soup with barley I made up afterwards.

I had a turkey dinner 2 weeks ago. I VOLUNTEERED to do the turkey and asked everyone else to bring things,,, that way "I" had ToTAL control on what we had. :) I made also the stuffing,,,, you can make it quite healthy,, ,just grate some veggies into it,,,,, it stretches out out,,,and it's HEALTHY. Carrots, summer squash, zucchini, mushrooms,,,, are a GREAT Place to start,,,and since they are grated,,,,, it's FINE !! YUMMY TO THE MAX !!! Can add in beets for a unique flavor, but they tend to really change the color, so that's prob better left for when it's you or fam only. :)

Oh yeah and I DO NOT Use butter AT ALL !! it still comes out to DIE FOR !

I saw about 20 turkeys cross the road by my house the other day. They better hide!

I'm having some apple dessert and pumpkin dessert too and some stuffing. No guilt here.

I feel better when I keep my carbs lower but I like carbs.

I am sure you will not overdo it for the stuffing, so it will not be such a big deal. You have been so good at planning, this is great! Happy Thanksgiving!

I'm scheduled to work - so we'll have potluck ... And a ton of leftovers at work. Typically, someone will do a turkey, there'll be lots of side dishes (I'm hoping for salads &raw veggies, too), and enough desserts to throw Ghandi into a sugar coma (must resist!)

Too funny! Now this year the claim is that turkeys over 12 lbs. are in short supply as the turkeys didn't gain enough weight! JEEPERS!!! Never a balance, is there!

Your stuffing secret is safe with me! LOLOLOL

SHE'S HAVING STUFFING!!!! (sorry had to do it! LOL) OH well, I have a sneaking suspicion you won't be the only one!
