wednesday--finally back in the loop!

hi everyone! finally back after three days of no cable--which means no phone, no tv and no internet. we had a whale of a windstorm come through here about 3 pm on sunday--took out our electric but we were lucky and got restored after about 5 hours. the rest took until late yesterday to come back on line.
looks like the cottage cheese has just about reached its end of days. most of it is gone--and this morning I ate some packaged CC for breakfast and what a difference! I was really amazed at the comparison--the fresh just tastes so much better--more like real food.
roasted a turkey Monday--they had a very good price on turkey and rob loves it so we bought one to roast and then take off the bone and freeze. you have to understand that I don't eat meat and am not the most capable meat chef in the world either. I read an article about how to brine a turkey, and since I wasn't positive it was completely thawed (it was close but not quite) I decided to brine it overnight sunday and roast it Monday. the actual roasting was simple, but I couldn't figure out if it was cooked through or not. kept taking it's little temperature and throwing it back in the oven for more time. I finally began to worry that I was going to ruin the white meat, so I took it out, carved it (a complete debacle, which the dogs enjoyed immensely since there was turkey flying everywhere) and microwaved it for awhile. rob came home and pronounced it good, so I took the carcass and made stock (the smell of that cooking will just about drive me out of the house) and portioned out the white meat with some broth and then froze it all. as per rob's request, the dark meat stayed out and the dogs and kittens will enjoy that for themselves.
going to a nearby town with some friends to hit the cheese factory and some other high spots. its crock pot split pea soup for supper tonight! have a lovely day!
